What's for Dinner?

Tonight for dinner we are going to have  AtkinsChicken Fajitas. However I am cooking them my way.
I started by roasting some chicken this past Saturday and I need to use the chicken asap before it goes bad. SO because I am on the Atkins Diet I have to make things Sugar free and Low in Carbs.

Here is my recipie:

2- Boneless Skinless Chicken Breast (Roasted in Butter, Salt and Pepper in advance)
1- Green Bell Pepper
1- Yellow Bell Pepper
1- Red Bell Pepper
1- Orange Bell Pepper
1- Packet of  Western Family Fajita seasoning mix (any kind will do)
2 tablespoons Vegatable Oil
1 tablespoon water
8- Whole Wheat Mission Carb Balance Tortillias
Sour cream (optional)

In a Skillet heat up the chicken (slice it up first), add the Fajita seasoning with about 1 tablespoon of water, cook until all water is evaporated and set aside in the microwave to keep warm. Cut all of your peppers julien style. In the same skillet you cooked you chicken in add the vegetable oli and peppers.....grill them up until they are tender. Next grab your chicken and add it back in with the peppers and continue cooking for another 3 mintues on a medium heat (this infuses the flavors) after everything is heated up take your whole wheat tortillias and place you fajita mix on tortillia, use sour cream as a garnish and some people like to heat their tortillias up....5-10 seconds in the microwave should be plenty of time to achieve tortillia warm-ness.

On a side note since I have a high amout of carbs today about 16g already I am using ice burg lettuce leaves as a sub for my tortillia shells to cut out that little bit of extra carbs....Hope you enjoy!
